Have you eaten enough turkey for the year? Don’t fret. Have you considered replacing chicken in some of your casseroles with turkey?
Freeze your left over turkey in small packages. Then use them over the next few months in dishes that call for chicken. Here is one of my favorite chicken casseroles. I made it tonight with turkey and it was great.
Turkey Poppyseed Casserole
4-6 cups of chopped turkey
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup sour cream
2 tubes of Ritz crackers, crushed
1 stick butter, melted
2 Tablespoons poppy seeds
6 servings cooked white rice
Combine turkey, soups, rice and sour cream. Spread in greased 13×9 baking dish. Combine crushed crackers, poppy seeds and melted butter. Sprinkle over top of chicken mixture. Bake at 350 degrees for 30 minutes or until hot and bubbly.
